Medium is good if you want to be left alone. No groups for dungeons, no groups for elite quest, no cooperation, no nothing, just you and the open world and questing. And secondly no, Pve servers are borring, so go Pvp server, its way more interesting and dynamic. So Pvp for sure and you chose medium or high.

The population is fairly healthy on the bigger servers and has been stagnant at around 300k for a couple years. You can use ironforge.pro to see the number of raiders on each server.
